Easy Seafood Gumbo - Weight Watcher Recipe

1 32 oz. can tomato juice 

1/2 Ib crab meat (when added tomato juice will darken to look more like Gumbo)

1 Ib. shrimp peeled

2 cups slice okra

1 large onion chopped

1 bunch green onions chopped

1/4 cups chopped parsley

1 bell pepper chopped

1 clove garlic minced

2 or 3 bay leaves

salt and cayenne pepper to taste

Empty tomato juice into a large pot.Add chopped vegetables and seasoning. 

Simmer for one hour. Add shrimp simmer 10 minutes. 

Add crab meat and simmer 5 more minutes. 

Remove from heat and let stand. 

This may be made several hours ahead and reheated to serve. 

(The flavor improves on standing) 

When heated serve in soup bowls with a scoop of rice on top and a sprinkling of chopped parsley.
